Its tempting to only think about the great physicists I suppose because their theories being fundamental tend to become more famous. Albert Einstein is going to top any list, Max Planck, Erwin Schrodinger and Werner Heisenberg for quantum mechanics. Dirac for reformulating those same laws... Watson and Crick for discovering DNA and starting the huge industry in genetics that we now have... Modern ones are Stephen Hawking and Richard Dawkins and both have written popular science books enabling layment to become familar with their ideas.
I'm tempted to mention Witten but string theory is all so tentative. Thats enough famous scientists to be getting on with.

Thomas Alva Edison was the most famous in the begining of 1.900's. Ian Fleming and Linnus Pauling were very famous and important in the midle of the last century. The most famous was Albert Einstein. Today: maybe Stephen Hawking...

Some obvious omissions: Richard Feynman, Arnold Sommerfeld, Ernest Rutherford, J. J. Thompson, J. R. Oppenheimer, among others.
Freud was a psycho-analyst, which doesn't qualify as science at any university in the world.

In astronomy, Edwin Hubble for the discovering that the universe is expanding.
In biology, James Watson and Francis Crick for figuring out the structure of DNA.
In psychology, Sigmund Freud for his many controversial theories, but there are many others.
