You can edit your webpages with any text editor, you don't have to use Internet Explorer to do it. Right click the page you want to edit and Open With notepad, or whichever text editor program. You can also run the text editor and then File -> Open and select your web page's HTML file.
Someone mentioned that you can use ALT to get to the Edit option as well.
If you find that you don't like IE7 and want IE6 back, there's a Microsoft support page with detailed instructions on how to uninstall IE7, this will leave you with IE6:

To uninstall Internet Explorer 7 to return to Internet Explorer 6 on Windows XP
1. Click "Start," and then click "Control Panel."
2. Click "Add or Remove Programs."

4. Scroll down the list and highlight the version of Internet Explorer 7 that you are running, and then click "Change/Remove." (If you are running Internet Explorer 7 Beta 2 Preview — March 20 or later, it is not necessary to check "Show Updates.")

You only need to do a search on here to see how many people are having problems with IE7. The best thing to do is download Mozilla Firefox available from http://www.mozilla.com/ Its faster, more user friendly, easily customisable to suit your needs and no problems.

Don't use IE myself but if you run IE directly from c:/windows/ie7/iexplorer.exe it loads up looking like IE 6. Just create a shortcut to this file. (The ie7 directory is a hidden folder)

I'm not too happy with it either, suppose it's what you get used to but the idea it gives you more viewable area on your screen is a joke.
I'd like to see a fully customisable version where you have complete control of all task bars, layout, borders, functions, the lot.
They keep giving us these half way houses where we still have to look at something that's almost the same as what we had before.

I wouldnt use IE6 at all, the reason for IE7 is security.....downgrading is not advised
