Are you talking "spirit's/cocktails? I would serve a punch here's a good recipe:

1 2ltr. of 7-Up
1 Can of Creme de Coconut
1 Container of Sherbert
here we have a pineapple, mango, strawberry sherbert and that I must say is one of the best punches that I have served!

Mock champagne:

Freeze apple juice in a ring mold, and right before the party dip the bottom of it in hot water and dump it into a punch bowl. Pour ginger ale over it and serve in champagne glasses! You can put cherries in the ring mold along with plastic holly to make it festive. Enjoy and Merry Christmas!
