If the needle is swinging wildly back and forth, the culprit is possibly a bad temperature sending unit--as long as you're sure the temp is okay. I assume it is doing this just when you turn on the car, and it hasn't had a chance to overheat?

if u sure the temp is ok then the temp switch/transmitter/sender has failed. i am not familiar with these engines but u r looking for a device screwed into the engine block with a wire petruding from it going to the engine management or directly to your gauge.
you need to change this its a simple bimetalic strip inside and they do fail.
sorry bit vague not my expertise but hope i sheded some light

If the wire from the gauge to the sensor shorted to ground it would make the meter peg.

it could be a faulty thermostat. Or it could be a faulty temperature sensor on the side of the block.

probably a faulty sensor. take it to the shop before you cause damage. it also could be a stuck thermostat.
