The size/minute can vary a lot. It depends upon what codec is used, what quality settings are used, the size of the video, the amount of movement and of colours, audio quality and encoding... everything is dynamic.

If you want to encode movies, know that everything is dynamic and everything can be set. Most encoders allow you to set what size you want the final move to have, and then they automatically choose the encoding quality in order to achieve the best compromise.
