First you want to change the inequalities to equalities and then solve for the variable. I have done so with step-wise procedures so you can see how it works.

1) 3p - 6 > 21
add 6 to both sides, combine like terms: 3p - 6 + 6 > 21 + 6
3p > 27
divide both sides by 3: 3p/3 > 27/3
p > 9

2) 9h + 2 < -79
subtract 2 from both sides: 9h + 2 - 2 < -79 - 2
9h < -81
divide both sides by 9: 9h/9 < -81/9
h < -9

3) -9h - 6 + 12h + 40 = 22
combine like terms: 3h + 34 = 22
subtract 34 from both sides: 3h + 34 - 34 = 22 - 34
3h = -12
divide both sides by 3: 3h/3 = -12/3
h = -4

4) 3p - 16 < 20
add 16 to both sides: 3p - 16 + 16 < 20 + 16
3p < 36
divide both sides by 3: 3p/3 < 36/3
p < 12

5) j/4 - 8 < 4
add 8 to both sides: j/4 - 8 + 8 < 4 + 8
j/4 < 12
multiply both sides by 4: j/4 * 4 < 12 * 4
j < 48

Hope that helps explain the method.

1. First: add 6 to both sides:

3p - 6 + 6 > 21 + 6
3p > 27

Second: set "p" by itself on one side > divide both sides by 3:

3p/3 > 27/3
p > 9

2. First: subtract 2 from both sides:

9h + 2 - 2 < -79 - 2
9h < -81

Second: divide both sides by 9:

9h/9 < -81/9
h < -9

3. First: combine "like" terms:

-9h + 12h - 6 + 40 = 22
3h + 34 = 22

Second: subtract 34 from both sides:

3h + 34 - 34 = 22 - 34
3h = -12

Third: divide both sides by 3:

3h/3 = -12/3
h = - 4

4. try it-look at one and two for reference.

5. First: get rid of the fraction > take the denominator and multiply it by everything:

4(j/4) - 4(8) < 4(4)
j - 32 < 16

Second: add 32 to both sides:

j - 32 + 32 < 16 + 32
j < 48
