Role playing is just what it sounds like - it's people pretending to play the roles of their characters. So if someone is playing a Dwarf Warrior, they may have a whole "backstory" or history of their character figured out. If they're roleplaying, they'll try to speak "in character."
For example, if someone is roleplaying an Alliance character and talking about the Horde, instead of just saying something like, "Yeah, they suck, dude," they'd probably say something more like, "Those foul Trolls! I remember when they slew my uncle's clan in Kharanos - I will avenge them!!"
Different people go different lengths with it. Some people who roleplay try to NEVER step out of character; other will only do it in their guild chat.
There are also different types - some guilds roleplay as pirates (expect to hear things like, "Arr! Avast matey!" if you join one, lol).
And of course, unfortunately some people on RP servers don't do it at all, and just make fun of those who do.
If you're thinking of joining one, I would recommend checking out the forum for that particular server (go to http://forums.worldofwarcraft.com, click on Realm Forums, then click the name of the server). You'll usually be able to see a listing of guilds, and explanations of which ones RP, which helps to get a sense of it all.

To piggy-back on what the others have said, RP is *supposed* to include people who act as their characters - dwarves talking in brogues, for example, or gnomes whotalkreallyfastlikethis, etc. In practice, the biggest difference is that people are *supposed* to use RP names, and avoid l33tspeak in /say, etc - and can be reported if they don't. So, while a player named "MageYouLook" is cute for a normal server, the GM will probably make you change it on an RP server. Assuming, of course, it gets reported - I've seen some names last a *long* time on RP servers that are technically against ToS.

Normal is for everyone to use. RP servers are for Role Playing. Everyone in the server plays in character at all times.

I play on a RP server, supposed to mean its for role playing so that you stay in character while playing the game, but I have yet to see anyone in character at all... I think its just the same personally...nobody is in character at all, and I am on Emerald Dream server.

PVP - Any area that is not a starting area or you factions main city area is a danger to you with the chance of being killed by another player PVE/Normal - The same as PVP except other players cannot kill you unless you are in a battleground or flagged for PVP RP - Strict rules and focused mainly on questing and journeying throught azeroth (there are some really weird people who play on these)
