It's part of Apple's branding campaign that started with the iMac (and continued with iBook, iMovie, iDVD, iPhoto, iLife, and so on). While they never definitively said what the "i" stands for, the allusions are both to the word "internet" and "I", emphasizing the devices' close relationship to the Internet as well as being a "personal" device or application for the user (underscoring Apple's ease of use for the common person).
