Green is the orignial color of Saint Nicholas, and Santa was that way untill coca - cola came into the scene and had a Red Santa representing it's company's colors. It became so popular it just stayed that way.

I think he used to wear green and/or white, but when Coca-Cola made it's Santa red the color stuck.
