And that include any that were just seen in the backround for a scene or two.
I know this is an odd question, but I'm just curious.

If I remember correctly, in a interview, Lucas said that he had created over 250 different species overall...

There are a lot of alien species shown in the Star Wars movies. I'm not sure if anyone has done an official count of all the different species in each film. Many of the movies have a scene where lots of different aliens are in a crowd, like in the Mos Eisley Cantina or Jabba's Palace.

If I had to guess, I would say that there are perhaps 40 different species of sentient alien (not including creatures like banthas or scurriers) in A New Hope, perhaps another 15 in Empire Strikes Back, another 40 in Return of the Jedi (some of these aliens might be repeats of species seen in other movies). In The Phantom Menace, there might another 70 or 80 species seen, and probably just as much in Attack of the Clones, but perhaps not as many in Revenge of the Sith. So just with my ballpark estimates, 250 - 300 species might appear in the films (though some species, like Wookiees or Jawas appear in multiple films) - so if we reduce the duplication, perhaps 150 different species seen in the films...

There are a lot of resources that help show different alien costumes that were produced for each movie, but you'd have to have a sharp eye to positively ascertain that they appear in the film - some might have been in shots that were cut.

every single "person" is alien in the movie.. you'd be for ages counting, try looking on the official Star Wars site.
