Why when I add concentrated orange juice syrup into a glass of milk, the milk "cracked"???
Is it because of the components of acid and alkali
or what?

the conc orange juice contains citric acid. The milk on the other hand contain calcium carbonate and the
acid + carbonate = carbondioxide. it is given off as a gas and makes the milk frothy. What you see is termed effervesence

The cracking is actually called curdling. The proteins in the milk get denatured, kind of like when a liquidy raw egg turns solid as it gets cooked. The acid in the orange juice curdles the proteins in the milk and that makes it look like it's "cracked".
