I have a GS500 and was wondering if its possible to put a bigger rear tire on it

Dont do it.
It will screw up the handling and will wear out faster than stock size. the wheel rim is too narrow.
If you fit GSX-R wheels/swingarm/forks you can fit wider tyres but you need other mods to make it work

Wider? A little, but not much. I used to run a slightly wider tire on my '79 GS425L. Had to notch the chain guard so the tire wouldn't rub. I don't remember the numbers anymore, it was only like one size up.
