Because it was that way in the early days of console gaming. With the NES, the only way to select between the number of players or options was pushing the "select" button. The up and down keys were not functional in this aspect. It must have carried on through the times, leaving us with the "select button."

Because They Wanted to call it select, and BTW on xbox that button is called "Back"...

because back with the nes ( dont know abotu the ones before it) you used it to select your options
