Tartaric acid (also called 2,3-dihydroxysuccinic acid) has two available carboxylic groups and as such is a good chelating compound.

The chelated heavy metal ion is larger in size than the free heavy metal ion and as such is more difficult to absorb. Often active transport sites are not activated by the chelated ions.
