are they worth visiting like the disney resorts?

I have still yet to visit Royal Pacific but from what I have heard I'm not missing much. The only one that I would might recommend seeing is the Portofino. Nothing really special just decorative "like Italy". Hard Rock is just like any other hotel.
Long answer short... No!!! They don't even compare to Disney Resorts.

I stayed in the Hard Rock this year, there isnt too much on there, they have some good entertainment sometimes!!
I think its the Royal Pacific that has a good spa, but i think you actually have to be staying in the universal hotels to use!
Dont know much about the Portofino.
If i were you i would focus on the rest of Orlando, the hotels really arent too important for a visit!!
