I use the Titans. Put White in at running back.
1. Run up the middle and around the corners inside the line. Don't run to the outside because White isn't fast enough to outrun people around the end. He'll run people over all day using the hit-stick.
2. Roll Vince Young out on pass plays and throw a lot of out patterns towards the sidelines.
3.There is an audible (if you have the xbox360) that is the RB button. The tight end runs an out pattern and the running back curls up the sideline. Roll out to the right and look for the tight end to be open. If he is covered, look to the running back up the sideline. If the running back isn't open just turn up field and run with Young. When playing against the computer you'll find that the tight end and the running back are usually open. If you play online, roll out with Vince Young and the person you're playing will usually take control of the guy closest to you to sack you. Unfortunately for him it is the guy who is supposed to be covering the running back. Toss a lob pass to the running back and take him up the sideline. If you perfect that play it is near impossible to stop.
On defense it really depends on if I'm playing someone who is running the ball or passing the ball a lot. I like to run a bunch of blitz plays off of the corners and audible my defense into showing a blitz to eliminate the run from the other team.

I have two created teams I use, the Jackals and the Busts. The Jackals are composed entirely of free agents and the Busts have as many players with the underachiever role or in imminent danger of getting it as possible. The challenge for both is to turn the team into a winner, the second having the added challenge of "redeeming" as many "busts" as possible, which is very difficult because all those underachievers wreak havoc on team morale..

It depends on who you play. And you play to the other teams weaknesses. For instance Colts D sucks. So I run westbrook from the eagles and then call a playaction bomb.

I know it is Unorodox, but I like to be the Falcons and have Roddy White run a fly. If he's open get it to him, if not look to someone else. If no one else is open... run! (with Vick)
