My Mom is a preschool teacher, and I can tell you what NOT to get a teacher.
For years, she has been saying, "My students' parents must think I smellno and need to eat." She gets so many boxes of chocolates and bath and body stuff. A lot of it winds up getting donated. The thought is definitely there (well, mostly. You can't say it's the thought that counts when you get a box of Russell Stover chocolates. There seriously can't be a worse gift.) It's the same with candles.
Gift cards are good, especially if you can get a group of parents in the class to chip in. Teachers often use their own money for supplies that enhance their classrooms, so a gift card to a place like Target or Barnes and Noble is nice. (Staples would be good, but just seems so impersonal!)
Fresh flowers are a nice gesture, and they can be enjoyed without worrying that they're going to take up room in the house.
Teachers spend a lot of time on their feet. If the teacher is a woman, consider a gift certificate for a pedicure or a foot massager.
What my mother appreciates most is a nice card, especially if it's signed by one of her students. A few years ago a parent wrote a poem about how much her son had grown in Mom's class, and she kept it displayed for months.

No chocolates, cookies or mugs pls. Teachers get so many boxes of chocolates they end up freezing them, same with cookies.
Give her or him a gift card to a theatre or movie. Gift certificates are always handy.
Offer time to help in the classroom or if the class needs some supplies buy them, many teachers have to buy out of pocket things the classroom needs. They'd appreciate help and respect. A note from your child telling her or him why this teacher is special to them, gets a teacher every time.
Respect from you goes a long way so you might even write a thank you letter telling the teacher why he or she has been so special in your child's life.
Flowers are nice, gourmet food basket fruits and nuts etc.
Teachers like almost anything from their students especially if they know the children picked it just for them.

Teachers get so many mugs and candy from well-meaning kids, it's nice to give them something different.
Go to a dollar store and pick up an assortment of items to make up a nice gift basket with all kinds of teacher's helpers: anti-bacterial soap or hand sanitizer, tissues, pens, colored pencils, markers, glue, tape, scissors, stickers, ink pad and rubber stamps, air fresheners, mini fans, notepads, construction paper, etc.
Other ideas:
A gift certificate to a book store or office supply store
A nice plant for the classroom

I like the idea of a gift certificate--- doesn't have to be pricey. Even just enough to rent a couple videos, tucked into a box with some microwave popcorn and some raisinettes. That way he/she gets an 'escape and de-stress' night in the comfort of home.

Apples.
I work in Northern China and students give apples as Christmas Presents. It is a sound pun, the word for apple in Chinese sounds like the word for peace (depending on the translation you use).
So give the gift of peace this Chrismas.
However, as a teacher I recommend you give the gift of a Ferrari, or at the very least, a Lexus. Thanks in advance.

A gift certificate to a spa or salon on a day when there is no school scheduled. there are cosmotology schools that you can get a 4 hour pampering, manicure, pedicure, haircut... for under $20 depending on your area...
Movie passes or dinner certificates are a blessing too!

I would fill a large cup with a package or 2 of hot chocolate, a candy cane and some nice wrapped chocolates and then wrap it up in cello with a nice bow.
