I was born and raised in Louisiana, raised with crawfish. I have never seen gills attached to appendages, I've always thought that the gills were inside the crawfish's head. Can't tell you how many pairs of gills there are, don't know. I can tell you that crawfish taste pretty good. I'm not talking about those little brown crawfish you may find in a ditch or pond. Our crawfish in Louisiana can get pretty big. I also seen your other question asking how to tell the sex of them. The only way I can tell which one is which is when the females carry their eggs under their tails. Wish I could help you more...Best of luck to you.
