I'm looking for something I can plug into the car and into my computer that will allow me to monitor air/fuel ratios, knock, EGT, maybe even horsepower.

If your vehicle is a 96 or newer, there are a few options, just do a search for obd2 pc software and you should be able to find whats out there. There may be a couple programs that are free but expect to pay for the pc to obd2 cable
