The Luckiest by Ben Folds makes my heart melt every time I hear it.
I'm a pretty big fan of "Melt with You" by Modern English and "Fade into You" by Mazzy Star as well.
Neutral Milk Hotel did a cover of "I love how you love me" that was fantastic, and Cat Power did a beautiful cover of "Wonderwall". "Under the Milkyway" by Church is sweet, so is "There is a Light that never goes out" by the Smiths... Uhmmm... so many others, but I can't think of them right now
