I have a pretty detailed ink drawing I created. I want to add a colour background to it and put white between it and the background in certain areas to create a kind of Saul Bass style.

In PhotoShop this is how I would do it. I would select the Magic Wand tool to select the black areas of my drawing, copy and paste them into a new document, and make three layers, the drawing one layer, the background another, and the one in between where I sandwich white areas.

I did that yesterday but, being PhotoShop, the printout quality was horrendous. It is also a college project I am meant to be using Illustrator for. Please help!

I don't understand very much what you want to create with your ink artwork BUT the only advice i could give you is to use the pen tool.
First
- PLACE the background image then put on it the ink drawing but if you want to take out the white areas just magic wand that out in PHoTOSHOP then save it as GIF then place it unto Illustrator.
-Select the PEN TOOL, go clicking the form of what you want to achieve on the ink artwork.....

i'm no sure if you even understood what i told you but the only clear tip would be to use the pen tool to "draw" the white areas and to use layers...
