Fat chance is a slang expression meaning you don't have a chance in the world.
Slim chance is literal and there is still a possibility that you might have a chance.
So they do not mean the same thing.

My two cents worth: because what is considered "fat" and "slim" are or were defined in a narrow range of weight when these expressions first entered English. Since our definitions of "fat" and "slim" have expanded (pardon the pun) over time, the expressions have not kept pace.

They don't - slim chance means you there is a tiny possibility that it will still happen.
Fat Chance is an almost derogatory way of saying "No way in hell"

When someone says "fat chance" they are being sarcastic and mean slim chance. Like when someone says "good luck" when you they think what you say won't happen, they say it in a sarcastic tone.
