Yes, I believe they can do that unless they signed a written contract with you that specified the probation period. For a definitive answer contact your state labor department; they usually have a Q&A hotline.

Yes. Keep in mind that almost all states are "Employment At Will" states and you can be let go at any time for any or no reason (that does not violate any protected class).

If you are a new employee and the company changes your "probation period" it sounds like they want to invest more time into working with you to make sure that you are a good fit (as opposed to letting you go).

Ask a lot of questions mainly "what exactly do I need to do to remain employed here".
