why is it important to protect water pipes so they dont freeze?

When water freezes, it expands (due to the crystalline nature of ice). If the pipe is full when the water freezes, then it will burst the pipe. You can test this with a half gallon milk jug in your freezer - fill the jug completely full, screw the top on tight, and put it in your freezer. It will burst.

All materials shrink or expand to some extent as temperature changes, but every material changes at it's own rate. That's why the sidewalk isn't one big long slab of concrete - as the temperature changes, the expansion and contraction of large slabs of concrete would cause it to crack on it's own.
