One example is brake fluid. Brake fluid transmits force through the braking system, and it would not operate properly if it had a different viscosity. Lubricants for machine systems also work the way they do in part as a result of their viscosity. Suntan lotion could not be spread across the skin if it were not viscous, because it would drip all over before you could start rubbing it in. Many cosmetic products depend on viscosity to be able to be applied properly.

Well, besides the automotive examples (brake fluid, engine oil, etc) you can find that viscosity plays a vital role in the most "real world" setting of all...the human body.
First thing that comes to mind would be blood viscosity. As you can imagine, this is a crucial property to overall cardiovascular wellness.
Viscosity in this sense affects the amount of internal friction contributing to flow resistance in vessels...which in turn can affect blood pressure and cardiac output.

Yes........ A hydraulic jack relies on the viscosity of the oil to control the rate of fall when lowering the load (car etc.). Automatic door closers are often oil filled, they use the viscosity of the oil to control the speed of the door as it closes. Thermo-viscous fan couplings in the cooling fan of a motor vehicle relies on the viscous oil filling to deliver increasing amounts of drive to the fan when the engine warms up. Shock absorbers use the viscosity of their oil contents to damp-out the shock motion imparted by an uneven road surface.

Heinz Ketchupp has to have a certain viscosity or it is rejected it must flow at a certain speed. It might be the only food in the world with an official speed limit (0.028mph)

There was a commercial for Heinz ketchup, called, "It's keepin me waitin'." The point was that the ketchup poured slowly. This was because of the viscosity even at room temperature (20 - 25degC).
One could say, "Hey, Girl, You is as slow as molasses in January!" The sugar syrup called molasses is slow anyway, but in January...?
Motor oils have certain viscosities, and we order them to fill our engines.

Any field that is interested in the flow of fluids. One I can think of off the top of my head is cardiology - the viscosity of blood can have a big effect on how it flows through the blood vessels. It is a determinant of whether fluid flows through a tube by laminar or turbulent flow.
