Ok...I have this sort of obsession with names. (I have a question up if anyone would like to look at it.) Anyway, I think you have some excellent names singled out here, and I am more than willing to give my opinion on them.
William - This name is very classic and manly, but there are quite a few elderly men called William. Plus, I do not find the nick-name "Bill" very attractive. Very Classy - but not my favorite.
Nicholas - There are a lot of Nicholas's out there as of right now... it's a cute name, but nowadays it leans toward the generic side.
Jack/Jackson - I can't say I care for 'Jack' that much, but Jackson is adorable. I can imagine a baby named Jackson, but as he gets older...I don't know. Something for you to ponder.
Carter - This name is lovely. Both for babies, toddlers, teenagers and grown men it is attractive, classic and not something you hear every day. I LOVE it.
Gabriel - I must say, this is a very iffy name. My name is 'Gabrielle' (I am a girl) and I can't escape people calling me 'Gabby' all the time. I dislike it immensely. People do comment on my name quite often, but the nicknames are terrible. Although the literal meaning of the word traces back through the Bible to the angel Gabriel, I wouldn't suggest naming your child this, for the sole reason the nicknames are too numerous and too humiliating.
Annaleise - I find this name particularly attractive (I like that word, don’t I?). I find it interesting that you should choose this name, because I too have been looking at it. I find it adorable as a first name, but even more charming as a middle name - although it presents a very cute nickname option - Anna.
Emory/Emorie - This sounds very masculine. I can’t say that I like it that much, but Emorie might be a good middle name. Annaliese Emory _____, Maybe?
Paige - There are quite a few pages out there now, so perhaps this wouldn’t be the best name if you were looking for something fresh or original, but it does make a very nice middle name as well.
Ashton/Ashtyn - This name is cute, but once again I can not find a grown woman calling herself Ashtyn. For a child, of course, it is adorable, but for an adult I cannot say I particularly like it.

Boys: William, Nicholas, Jack/Jackson are definite no- no's plain boring and old fashioned. not too keen on Carter. Gabriel is very good as it is a nice strong name and has a good conotation.
Girls: Annaliese is boring. Emory/Emerie reminds me of an emery board (nail file) so no. i don't like Ashton/Ashtyn for a girl. Paige is a very cute name for a girl.

For a boy, I like Carter and Nicholas. Maybe Nicholas Carter..? depending on your last name. Gabriel seems too angelic, Jackson's nice too but not my favourite and William is too common.
For a girl, I like all of them! They're really unique and pretty. If you were to combine two of them, I'd go with Ashtyn Paige. Or maybe spell it Ashton just so she wouldn't get questions of the spelling all the time!

boys, I do not like gabriel I know a guy names that & he kinda creeps me out hahaha sorry I hate to say that... I like william alot (but I like will for short billy isnt bad either) I really like nicholas but dont let anyone ever call him NICKY it horrible for a boy! Jack/Jackson are not bad but WAYYYYYYYY to common now. I like Carter but it would have to "go" with your last name to sound right I think
girls, Annaliese is a very pretty name and I am starting to get over the fact that it was the princess's name in the barbie princess and the pauper (I hate barbie so this is a good thing thay I am getting over) I really do like it if it sounds good with your last name. I love Paige it is my Daughters middle name (Jordyn Paige) Emery is cute but sounds a little abrasive for a girl (no pun intended~emery board~) Ashtyn is really cute also that one is growing on me.
if I have any more kids then I would name them Nathan Christopher , Zachary Christopher for boys and Salem Elizabeth or Avery Elizabeth

William - great name - will age well as he grows
Nicholas - ok, but he will probably be called Nick
Jack/Jackson - Jack is better, but may be teased and called "Jackoff"
Carter - don't like that one
Gabriel - love it!
Annaliese - beautiful!
Emerie - very nice and unusual
Paige - a strong name
Ashton/Ashtyn - sounds too masculine, what about Ashleigh?

William Jack and Nicholas are to plain.
My cats name is Jaxon (another spelling of Jackson)
I know a little boy named Carter. (Cute)
Gabriel (angel) yeah right! LOL
Annaliese is pretty & different.
Emory (not Emerie) is adorable.
