Generally, I'd say nothing. Unless of course they are a friend or relative. But then keep the gift giving separate from work.
Now, it may be that the boss expects the people that work for him to give him gifts. Start looking for a new job. A good boss would never expect a gift from her employees. The boss should give the employees gifts, not the other way around.
Giving your boss a gift is just a bit, well, creepy. Despite the gazillions of companies trying to convince you that you need to buy something.
Give your boss holiday greetings, a card. And if you must, give a gift to your entire office - that would include the boss. Cookies, anyone?
