I met some indians the other day (people truly from India), and they did not eat root vegtables (Potatoes, carrots, etc.)

What religion would this be given their nationality?

These people were probably Jainists. Jainism is related to Hinduism but has significant differences. Jainists believe in doing as little physical harm to other living things as possible. Some of them will only eat Fruits, vegitables, nuts etc wherein the eating of these things will not kill the plant that it is taken from.

The vast majority of East Indians are Hindus, although some are Muslim, some are Bahai (an offshoot of Islam, today considered a wholly separate faith), and some are Buddhist or Jainist as mentioned above. I agree with the poster above who suggested that they were probably Jainists and would thus not want to uproot the plant from the earth in order to eat it; it would be "killing" the plant , and they refuse to do that. Other than that, I think we'd need more info on the East Indians in question in order to better determine what their faith tradition would most likely be.

Abrahamic religions: trust that there is basically one God. Im not confident about Chirstianity although because they have the holy trinity. Indian religions: basically about all the religions you listed trust some thing diverse. Like hinduism has like extra then one hundred gods, the position as Sikhism's have experts and that i imagine they basically position self belief in a unmarried God. Taoic religions: Are really about unity and stability. they don't seem to be extremely religions.

Most Indians are Hindu. There is also Baha'i, Sikh, and Buddhist prevalent in India.

I don't know about the root veggies thing.
