Gases (volitiles) change the melting curve (pressure vs temp) of the rock around them. They also help determine the viscosity of the magma/lava

In subducion zones, water or other volatile compounds are incorporated into a magma body, the gases are increasted. This is the reason you will find highly explosive eruptions near and around the edges of the pacific plate. (the ring of fire) The other common type of volcanos are those which are cause by hotspots in areas that do no reside on the edge of a plate. These volcanos (kilauea for example) have very little volatile compounds to create gas, which results in comparatively calm, mafic, magma flows.
