Take the high road and apologize for hitting her. There's no excuse for resorting to violence when you can just walk away from the situation.
She is clearly in the wrong for both insulting and hitting first... but if she is your friend you should have asked her WHY she was calling you names, instead of retaliating with an insult.
If you care about the friendship, also apologize for insulting her mother (who had nothing to do with the situation) and ask her why she called you names in the first place.
