"Materials in place"; in cooking, it's having all of your ingredients and utensils at the ready, measured out, cut up, etc. before you start. Which is a good idea, of course: the egg whites at the stiff-but-not-dry stage is not a good time to find out you don't have any sugar to finish your meringue.
