Elder Scrolls is a great game. I think it has the most replay value of any game for 360. I've heard that NNN is a rather dumb game, but I've never actually played it. Kameo is good for awhile, especially if you have younger children or people who are intimidated by the controller. I've heard Saint's Row is just a GTA knock off, but some of those games are still fun.
As far as other games. Gears of War is a graphically wonderful game. It also has an interesting take on an action game. However, the story in the long run left me unfulfilled. It is also short. Really short. You could beat it in 10 hours or less on easy. On difficult it definitely increases the time required, but I think it is cheap if a game's length depends upon its difficulty. Sometime the controls can be a bit sloppy too. I would rent it and decide if you like it before buying it.
One of my favorite games at the moment is actually Viva Pinata. It is silly and ridiculous, but it is a soothing game that is addictive and rarely gets old. I think it is definitely worth checking out; however, in my youth I doubt I would have liked it.
Hope that helps.

I would suggest Gears Of War if you're into 3rd person shooters. So far it has a great story line and awesome action. (I'm playing it now) plus it's the most graphically advanced 360 out there right now if you're into that sort of thing. I also really like Burnout Revenge for driving and Samurai Warriors 2.
I also own Ninety Nine Nights and I'd get rid of that among the games you have. The hit detection is terrible in it.

If you like 3rd person shooters, Gears of War is fun, although short.
Tactical shooters, Ghost Recon (but a new one is coming soon), and Rainbow 6 Vegas. My friends and I have more fun with Vegas multiplayer than Ghost Recon.
Burnout Revenge and Project Gotham Racing are fun racing games.
Dead or Alive is the only fighting game available so it wins by default if you like fighting games.
