These are ballads that I like, and can sing. They're are considered difficult ballads because you need strong head voices, good use of trills, a good use of range.
Without You - originally sung by Badfinger...but made popular by Harry Nilsson, Air Supply and Mariah Carey. Remade by Clay Aiken. You can totally do alot with that song.
All is Fair in Love - Stevie Wonder, high range singing here, very hard to pull off if not done right
All out of Love - kinda cheesey but if u can hold the last note...its sure is a show stopper. Sung by Air Supply and Jagged Edge (their version doesn't hold the last note as long as Air Supply)

i would try something by Richard Marx (power ballad 80s guy). "hold on to the night, right here waiting" They're fairly easy to sing, but have moments that can showcase your voice. They work well on the piano and acapella. They also are pretty timeless. lastly, the fact that they were originally song by a man makes it easier to "make it your own". I wouldn't try anything risky like "midnight train to Georgia" hell, anything by Gladys knight, Celine Dion, or Whitney Houston. Too much familiarity, too much pressure. However, Christina A. has a big voice which is great for Motown and r&b. However, if you think you're up to it, Power of love (celine dion) is pretty great. You can also refomat a country song, like "i hope you dance".

it depends why you wanna sing the ballads....and when...
you could challenge yourself and sing whitney, mariah, and christina.... Hero is always a beautiful song...
you could go for a simple song that can blow people away like "a million love songs" by take that...
