It is a tough question but I think there will be a few good answers out there.

I wouldn't want to do without sight because I wouldn't get to see my husbands handsome face or my kids on graduation and such. I wouldn't want to do without my hearing because I couldn't bear to not hear my kids say their wedding vows or hear I love you ever again. I wouldn't want to go without taste because I love food and drinks and that would suck. I wouldn't want to go without touch because human touch is such a healing thing. The sense I could live without is smell because I have a husband and two sons who fart all day and night and they sweat and their feet stink.

It's tough alright. I started off by thinking what I wouldn't give up: sight, hearing, touch. That narrowed it down to smell and taste.
Since, if you can't smell, you can't distinguish among many tastes;
"Your tongue can differentiate four different tastes: salty and sweet in the front, sour on the sides, and bitter in the back. Most of the taste buds are concentrated in the front two-thirds of the tongue. Burning the tongue, alcohol, and smoking can cause direct damage to the taste buds. It is interesting that you seem to have retained the ability to recognize distinct tastes (except bitter which you didn't mention) but you still can't appreciate the "flavor" of food. That's probably because of your loss of the sense of smell, since taste is very dependent on a good sense of smell. In fact, the most frequent cause of impaired taste is a loss of smell. Taste and smell are very closely related. One nerve called the olfactory nerve controls our sense of smell, and two separate nerves regulate our ability to taste."

I guess it'd be better to give up taste, since without taste, I could still smell, and "Smells can also trigger vivid memories in people."
While if I gave up smell, I wouldn't be able to taste much, if anything anyway.

Besides, I've been told I HAVE no taste.

I would give up my sense of smell because most scents are pretty bad anyway so I don't feel like I'd be missing out. Plus, scent has a very strong connection to memory, and there are a few scents that remind me of unpleasant things...and I think I could do without the reminders!

if i had to loose a sense i think i would want to loose my hearing. i already have pretty shitty eye sight so i know a bit of what its like not to be able to see and i don't ever want to live without my sight. i think it is a great experience to smell and taste things. i don't know why others said they would give up those senses. i need to be able to taste my chocolate. and if i keep my sense of touch i will still be able to feel things that i can't hear, through vibrations and such. communication will still be possible through sign language and writing and speech etc.. it would be tough but i think that being deaf would be most doable and bearable for me.

Taste or smell. I couldn't give up hearing and sight-those would be the tough ones.

Would have to be sense of smell, though that does affect your sense of taste. My father has no sense of smell and he has coped fine for over 70 years. Sight is the one I would be terrified to lose over all others, couldn't cope with nothing but darkness I would find it so isolating.

Hmm...

If forced to give one up, I think it'd have to be taste.

I love the arts and to read, so I'd hate to be blind (I know there's braille that I could read, but... nevermind)

I love to listen to the soughing of trees when I walk in the forest, so I'd hate to give that up.

Touch... couldn't do without that.

Smell, I love the scent of fires and lavender and cut grass... I'd miss those if I couldn't smell.

Though there are many tastes that I love, I think that would be the one I could give up the most easily.

Taste. As long as I could smell the food I could be happy, as long as I could feel different textures, as long as I could hear music and see colors. Taste is great, but when compared with the pleasures that other senses can allow us, it doesn't seem quite as valuable.

Smell or taste I suppose...I would lean towards smell, as I love to eat, but I have heard that the majority of your taste sense is actually in smell...so I suppose I'd need to research it further.

I would give up my sense of taste because then food would all be the same, and I could stand to lose a few pounds...LOL!!
