My husband wants christmas eve dinner so his friend can come over. There are no limits to what we eat so anyone have any suggestions on what to make for christmas eve?

Finger sandwiches, veggie tray and dip, maybe a small shrimp tray, chips and dip. Coffee, tea, and soda.

Edited: I forgot to add, maybe a cheese ball and crackers.

Always seafood. Its classic. Have a buffet its so easy. Pick three seafoods like shrimp, crab and filets. You can make the shrimp a cocktail, make the crab a salad and then end with a filet. Whats good with this is an assortment of cheeses and wines which is easy enough to put together. Then make a rice pilaf and asparagas to go along with the filets. Line it all up on a buffet table with some nice medium size plates. Never use dinner plates. For a buffet everyone needs to be able to hold their plate in one hand while the other one is free or has a glass of wine in it. Plus they dont tend to eat so much if their hogs.

Here are three ideas:

1 - We used to live near a GREAT German deli that made all their own sausages. At Christmas they made a variety called Medisterpolse that was the traditional Christmas Eve dinner in Denmark. We kept that tradition for years -- it's simple, tasty, and left us lots of time for assembling the kids' presents later. Mashed potatoes, sweet-and-sour cabbage... mmmmm!

2 - "Chinese turkey." For years now we've gone to the local Asian market and bought a whole roast duck, like the one at the end of "A Christmas Story." I chop the head off at the table and the kids all squeal like in the movie, then we have "Chinese turkey," plus other Asian food (barbecue pork buns, pan-fried noodles, whatever we feel like.)

3 - Something I saw on the Food Network -- Giada de Laurentiis did a special (with Mario Batali) about Italian Christmas traditions. Naturally, the Italians go for food in a big way. For Christmas Eve, she made a dish of baked ziti with meatballs that has had me pining for it ever since I saw the show two weeks ago. She made it by browning meatballs in the traditional way, then she mixed a light marinara sauce with ricotta cheese. Finally, she combined all three elements -- meatballs, sauce, and freshly cooked ziti (also called penne: straight pasta tubes with the ends cut at an angle) in a big baking dish, topped it with grated cheese, and baked it till the cheese was bubbly and brown. It looked INCREDIBLE. And of course, the recipe is on line... I've added it to the Sources field.
