Well, I walk by these almost weekly. The Fairmont is up the hill from Union Sq., the Monico is a bit past Union Sq and bordering on not such a great neighborhood (but allows pets), the Grand Hyatt is a good location and nice, but just a Hyatt. There is also the Westin St. Francis right on the square that is fabulous!
Union Sq. is a good central point to stay around, so is the Embarcadero. The Palace Hotel is a terrific hotel and more central to the city overall (http://www.sfpalace.com/main/virtual_tour_home.htm) and is a great place to be.
In order:
Westin St. Francis
Palace
Fairmont
Grand Hyatt
Monaco ( I assume you mean this one monAco)
hope it helps

I live in downtown SF. My friend works at the Fairmont and I remember him saying that it's an old, kind of dirty hotel. He contracts there and avoids it when he can. The one good thing about it though is that it has the Tonga Room, a polynesian themed place to get good drinks and a cheap, good buffet dinner Monday through Friday. You can always go there to eat and drink on your own.
I am not familiar with the other two hotels, but Hyatt's are usually a good way to go.

I prefer smaller hotels thus I'd urge you to try the Monaco. I had a birthday party there one year and loved it. The restaurant in the hotel [Grand Cafe] is really good, far above what you would expect of hotel food.
The Fairmont is overrated, and the Grand Hyatt is devoid of any character.

I visited San. Francisco last spring and was shock!! Not only is the price is high for hotels, but you also have to pay an extra for parking. I stayed for one day and the parking for my car was $38.00 at the hotel and a additional $25.00 at the wharf for 8 hours. At $210.00 a night at the hotel you would think that parking your car would be included, I wished I would have known about this before I went or I would Have stayed in Oakland where the Hotels where much better and cheaper, plus you didn't have to pay extra for you car. To make matters worse, It was about 9:00pm when I arrived and was hungry, at the hotel there was a Denny's so I went in and the prices there where double then any other Denny's $16.00 for bacon and egg's and $3.50 for a glass of milk, I was outraged!!! I could't wait to get out of their and go home to Seattle where it is a much better place to visit!!!

I had the worst time on the MGM. We had a pair days have been the maid on no account confirmed up. We needed to difference rooms two times in view that of noise from elevators and different visitor. The bedding was once scratchy and sucked. I was once no longer pleased in any respect.
