Hi: I've played all 3:
Nexus Ops is a good game. It plays fast, it is well balanced, and it is fun. This is the one I recommend.
Ingenious is pretty dry, and very abstract.
Cosmic Encounter is also very good. But I'm not sure of the latest Avalon Hill version, where the reduced the game to 4 players, and they might have taken out some of the better alien powers.
If you need more info, including more reviews and ratings, check out BoardgameGeek.com.
(I've included links to the entries for these 3 games).

Some great reccomendations above, and all worth taking a look at. One important consideration is how many people will typically be playing the game. Some games can play 2 player, but aren't as good when they are.
If it's typically going to be you and your husband, I'll add a few more choices to your list (and second some others)
Ingenious - Some find it dry, because there's no "theme" attached to it. I enjoy it immensely because the game stays consistently good from 2-4 players. It can also be played solitaire as well. You can give the game a try online here: http://www.marquand.net/index.php?topic=ingenious . See if *you* enjoy playing the game before you get it for him :-)
Blokus - Another abstract strategy game, which my wife refers to as "the anti-Tetris." Again, plays well through 2-4 players, but really shines with 4. You can give Blokus a try at the game's website: http://www.blokus.com
Some other options:
Hive - 2-player only. Quick gameplay, realtively easy to learn. Try it online here: http://www.hivemania.com
Any of the GIPF project games - Zertz, Dvonn, Gipf. All 2 player only.

Cribbage is the best card/board game that takes math and luck into consideration. The game takes less than 60 minutes to play even if you go three rounds. This game is great for two or four and is wonderful for kids and honing their math skills and having time with the family.

Settlers of Cattan is a interesting game. It is a very strategic and can be competitive or relaxed depending on the mood, the only problem is that it is expensive, but I am sure you will love it. I'm not sure if it is two player though.

It is hard to complete with the classics like Risk, Chess, Statego, and Scrabble. It sounds like you are looking for something new.
Here is a absolute winner! Abalone, Amazon has it for $22 (great game). For some other unique games, check out this web site:

good luck!

There's a game called CODA and its pretty fun and takes VERY little time. is cheap too. you have to break the code of your opponents. it really fun and addicting. generally, it only costs about $9.95.
"Try to crack your opponent's code before yours is revealed. Guess one of the opponents numbers to expose it and then add to your secret code. Guess incorrectly and you must reveal one of your own numbers. On each turn, a new number enters play. Use your intuition and detective skills to be the last player standing! Conceal your secret code, Outguess your opponent, Deduce the solution, Amaze your foes. In the game of CODA players try to crack each other's "code" a sequence of secret numbers. Guess an opponent's secret number and it is revealed (by knocking it down). Guess incorrectly and you must reveal one of your own secret numbers! On each turn, a new number enters play, which helps you to narrow the possibilities and grow your own code. Common sense, intuition and your "detective" skills will guide you to success."

Also, there's a game called Davinci's challenge.
"The ancient game of secret symbols is a classic strategy game with hidden mysteries as old as the pyramids! Take turns placing shapes on the game board to reveal 9 different patterns. The more complex the design, the more points you score. This is a challenging board game that your older child will enjoy. The game takes only minutes to learn but can take a lifetime to master. Players place simple oval and triangle shaped pieces on the playing board to form 9 different patterns, or secret symbols, including the all-seeing eye, the hourglass, the gem and more. Players score more points by creating more complex patterns. As the game progresses, players score on multiple patters with one move, or block opponents from completing their patterns. The object is to acquire the most points by the end of the game. "

I own both of these games and play them ALL the time!
I hope you find a good game!

You may want to consider Puerto Rico,
http://www.boardgamegeek.com/game/3076
It's number 1 on the boardgamegeek list for a reason.
There's also an official two person variant available,
http://files.boardgamegeek.com/viewfile.php3?fileid=1583
Most of the usual stores are sold out at this time. I did manage to find this place,
http://www.ccgarmory.com/puertorico.html
They seem to have it in stock but you might want to call first to confirm.
