Origins as in the name of the song or the meaning of the words?

The origin of the song is that it's a traditional English song.

Back in the day when we still personally killed the food we were going to eat people would keep a goose and feed it so it would get nice and fat for Christmas dinner. So the first line is just talking about how close Christmas is.

Asking for a penny in the old man's hat was a way of asking for charity, asking you to be generous around Christmas. If you didn't have a penny there was a coin called a half-penny. In local dialect it was a ha'penny. If you didn't have either it meant you were as poor as the old man so then God should bless you.
