The date of Jesus' birth was probably not December 25, you're right. However, the exact date is unknown. Thus, the church (I believe in the Middle Ages, although it could be earlier) picked a day to celebrate the birth. In other words, a day is needed for the birth celebration, so an arbitrary choice was made.
Ah, but that's wrong. As you correctly point out, the choice was not arbitrary--it coincided with what we now call "pagan" rituals already in place in Europe at the time. The early church co-opted the day and some of the facets of the celebration for their own purposes. Personally, I don't really have a problem with the co-opting, but, as you say, people should do their own research.
What I find really interesting is that Christmas itself (as the celebration of the birth of Jesus) is being co-opted--this time, by the politic-corporate hegemony. The entire U.S. retail, manufacturing, and service economies, and, by extension, the rest of the economy, are geared around the celebration of Christmas. From a very real, material perspective, all religious meanings (both ancient and modern) are being stripped out of the holiday, replaced by generic messages of "good will," and, more importantly, CONSUME CONSUME CONSUME.

Because it was easier in the beginning to get people to accept Christan Holidays if the fell on days they already knew. However since there has been many historical documents to back the Christian claim that Jesus was born what is your proof that the sun god was born?

We honor the Sun God fifty two times per year. Same with the Moon God, the God of War- Thor, the king of the Gods- Woden, etc, etc.
You ask, why do they? I ask, why shouldn't they ?

Because Jesus is the son of god and he was sent to earth to die for everyones sins in the world. Why not celebrate the saviors birth? He died for you and then when he was ressurected on easter he went to the throne to be with his father
