It is common to have a dagger in your main hand with a sword in your off hand but is is not needed to implement your ambush-backstab combo (specially since both the ambush and backstab require your dagger not a sword).
As for being wanted in instance, you may want to focus on Subtlety tree, making sure to get the Improved Sap. That is an attack that will make you useful in an instance (you can use it to neutralize a mob before a pull, reduce the number you have to fight at once).

It depends on which way you want to go as a rouge. If your the kind of rouge that like big hits then go swords or maces. If you like to do constant little hits then go daggers. If you want to do both then dagger/sword. Whatever you do best with is what you should do. If you think ambush/backstab is the way to cause the most damage then go, but from the way you worded your question it seamed like you want to duel wield swords. Talents is also crucial to weapon selection. If this is your first character you don't know much about talents. Anyway subtley rouges are great stealthers. While assassination and combat rouges are good at straight up Damage. I'm not saying subtley rouges aren't good at Damage, but assassination and combat rouges are better. As for the instances part, it can vary. Some like rouges alot because they do alot of damage and can crowd control(sap). Others don't like them because they are substandard tanks that should leave the big damage dealing to the range. Some other If you like PvP then go subtley in my opinion. I am a warlock and rouges pwn me from of no where, but if can catch them before they get me I'm good.
So basically do whatever you think will suit the way you play best.

If you're going to be focusing on backstab, you'll need a main-hand dagger. I know some folks who do weapon switching (so that they can backstab with a dagger, then switch to main-hand sword for the rest of the fight), but it's kinda messy. Either way, backstab is a good opener, and once you start attacking, you'll use both weapons, whether daggers, swords, or anything else.
If you're going swords, as a rogue, your best bet is combat spec - they don't rely as much on backstabs, so don't suffer as much from lack of a dagger. Overall, I'd recommend sticking with daggers no matter your spec - you get the flexibility to backstab whenever you can, and don't have to get into pissing matches with paladins/warrriors/hunters over who should get a particular sword.
In terms of instancing, a well-geared and well-specced rogue is going to top the damage charts - youre the bread-and-butter DPS for a group, especially larger groups. We're got little for crowd control, and our survivability isn't as great as, say, a fury warrior - but we still have a place. The biggest issue with finding a place as a rogue... is other rogues. We're a dime-a-dozen, to the point where folks start complaining about running into "yet another night-elf rogue." That said, if you find a permanent group, you can get a good thing going.

It's spelled 'rogue'. Rouge is something some women use for face make-up.
I can't answer your best 'combo' question, as my main was a 60 huntress, but I can tell you rogues are the most common class on my server (Cenarion Circle-RPG). They have a very hard time getting spots in end-game instances, worse even than hunters (second most common). If you want an almost guaranteed end game spot, play a priest or warlock.
On the other hand, the rogue is a blast to play- the stealth capability is awesome (I have a level 15 rogue). Also it is the character most chosen by 'farmers' who repeatedly work areas to gather loot and money, and I think the stealth capability has a lot to do with it.

Well there is no "best" combo for a rogue, except for the way you play. I have 2 60 rogues, one on a pvp and one on a pve server. I have tried all combos, dagger spec, sword spec, mace spec, and even fist spec. For me, I use dagger spec for solo, sword/mace spec for pvp and fist/sword spec for raiding. But for a rogue you need to find what works for you, are you a combat rogue, a stealthy rogue, or a stun lock rogue. Play around with the toon for a bit, and try things out. Figure what works out for you. You can always respec or get new weapons, don't set yourself to one thing and go for it, try it all and find what fits your play style.

I have many level 60 rogues and they arent "general" purpose enough to say that there is a best combo. The rogue was designed for someone who changes his/her play style alot. (sometimes soloing while othertimes working with teams)
