I'm sure they might figure it out if I never message them, but is there something that tells them I'm blocking them, or do I just appear offline to them?

Or what about deleting friends, they'll see that, right?

You will appear offline to them. I just tested this with a friend of mine in Windows Live Messenger.

So I then asked myself: What if I try to send an offline message to them (now that that feature is availabe)? I sent them an offline message, and it was seemingly delivered (althouth in reality, my friend never received it).

Therefore, there is no way for them to know. You simply appear offline and mysteriously stop sending them messages.

You will still appear to be in that person's contact list, though, when you query to see who all has added you (unless they remove you).

In Yahoo however there are other ways to see if someone is online
Your Yahoo main screen shows your friends and bypasses the 'block feature'
