Well in the song the "sable" is not refering to a ferret. However, the word sable is one of the types of ferrets. It is the most commonly recognized coloring for ferrets. There are three types, Sable, Dew and Albino. Here is a link to show you a picture of what a sable ferret looks like.

a sable is a type of mink coat or perhaps a car/ Mercury Sable. I think it's more the coat though. The song was originally sung in the 1950's by Eartha Kitt.
