Because cheese proteins contain pharmacologically active amines, similar to Dopamine which is a neurotransmitter in the brain. Especially blue cheeses, where the microorganisms break down these proteins into small molecules that get into the brain rapidly. Presumably, high levels of transmitters cause enhanced brain activity and more vivid dreams.

Some cheeses contain a chemical called tyramine. (As does red wine usually). Tyramine is similar to certain neurotransmitters in the brain (as suggested above). If you eat a lot of it, it may have some effect on the action of the brain, which could manifest in odd dreams.

Cheeses, especially mature cheeses contain two compounds, tryptophan and tyramine, that act to increase dopaminergic, adrenergic and serotinergic neurotransmission.
Tyramine acts as a sympathomimetic amine. That is, it mimics the effects of adrenaline, nor-adrenaline, 5-HT(serotonin) and dopamine. It does this by displacing these compounds from terminal boutons at neuronal synapses; and it achieves this by:
1. Preventing Monoamine Oxidase from degrading putative amines by acting as a competitive substrate.
2. Being packaged into vesicles and preventing vesicularisation of putative amines.
3. Increasing local concentration of putative amines by the above two mechanisms.
4. Inducing reversal of the Uptake 1 transporter.
It can also prevent reuptake of putative amines in the synaptic cleft by acting as a competitive substrate for uptake mechanisms 1 and 2.

Tryptophan, on the other hand, is a precursor for 5-hydroxytryptamine (5-HT/serotonin) biosynthesis. Increased tryptophan content in neurons will necessarily lead to increased 5-HT production.

Dopamine and serotonin (and nor-adrenaline to some extent) all act in the brain in multiple pathways. These include pathways associated with sensation, mood, perception, etc. Increasing their levels will stimulate these pathways more often. Schizophrenia is associated, nay, caused by overactivation of dopaminergic pathways.

cheese or chocolate late at night causes a slight chemical imbalance which then causes you to have bad dreams. it's not an old wife tell but has been studied at one of the uni's in the UK.

its something in the cheese aparently..i cant have cheese and milk together coz i get really bad nightmares..so if i have a cheese sandwich at bedtime i cant have a glass of milk ,say a bit later coz i have really bad nitemares
