I know you can e-file, but is there a 1040 practice page where I can fill in all the stuff and check for mistakes before filing?

You can print out any tax form in advance from the IRS website.

http://www.irs.gov

It's a pretty informative site, and it offers a lot of in-depth detail regarding any questions you might have.

As far as I know, though, there's not a computerized "spell-check" type feature, so to speak, that will run through it and look for mistakes.

There is, however, software such as Turbo Tax that makes filling out your tax forms quite a bit easier, and alleviates most of the mistakes people would make. I don't think it's all that expensive.
