Indisputable factoids:

The war on Christmas was fabricated by the Christian right.

The greeting 'Merry Christmas' offends 5 percent of the population.

'Happy Holidays' offends 40 percent of people and I'm guessing that those are mostly holy rollers.

I guess it depends where you are. I'm guessing you're in the US, where most people, Christian or agnostic/atheist, still celebrate some form of Christmas. Even the non-Christians I know I have "Christmas trees" and open "Christmas" presents on 12/25. So my answer would be no, it's not politically incorrect. It's just friendliness unless you know someone is a devout Muslim or something. It's just a greeting, a well-wish.
BTW - I'm a Christian but I have Jews in my family. None of them are offended if someone says Merry Christmas. I think people are way too sensitive.

We really do not care if it is politically incorrect.

And the "war on Christmas" was started by the ACLU, when they started suing towns over removing all symbols of Christmas.

Merry Christmas.

Its simply a nice gesture since its so close to the holiday of Christmas. Simply ask your self if someone said Happy Hanukkah to you, would you be offended? Its nothing to be offended about, and if it does offend someone, they need to ask themselves why they are so sensitive.
