Weeeeell, I'm guessing it was the old block thing- you know, line up the rubber letter stamps on a form and then ink and then press on the paper... Or hand lettered...

There is a font called Phidian and another called Chorus Girl, both of which can be found in a category of Victorian display fonts produced by Dover, Electronic Display Fonts for Macintosh and Windows. The wild west was in the era of Victorian, so anything victorian was used for printing in those days.

On the macintosh operating system, I have a font called "Wanted" that looks like a wanted poster font (go figure!). Hope this helps.
