As far as Christmas goes, at that time the Romans were trying to convert everyone to Christianity, and they found it easier to kind of blend a Christian holiday with a "pagan" holiday to make the transition to Christianity better for the "pagans."

for the guy that wanted to know why we celebrate christmas in winter:
because in the middle east, seasons are opposite. so when its summer here, its winter there, and vis versa.
