I like the Magica Theme on Dio's Magica album..the whole album actually has some great instrumental pieces.

I recall a pretty good instrumental on Argentine metal band Rata Blanca's debut album. Shredding and all that sort of stuff; quite reminiscent of Van Halen's "Eruption," only with a more neoclassical metal flair.
