Here is an idea for your science project. But let me tell you first how I started thnking about it.
Whenever I walk across the street in the city, I notice that some people cross the street on red light. I also noticed that members of minority gropus (African-Americans, Hispanics) usually cross the street on red light much more often then do whites. I became curious about this fact. Is there is any correlation between someone's race and the amount of risk a person takes? To me it seems that there is a definite correlation. So, for your science project you can try to observe how many people cross a street on red light and what percentage of them are minorities.

Hmmmm, I don't know what grade you are in or what level of expertise this needs to be but you can do a project where you test the nicotine levels in cigarettes. See if the lights are light or just as strong as the regular and how much the non filters have. Contact your local health department and see if they have a tobacco education and cessation group. If they do, they might have an automatic smoker you might be able to borrow. It is a device that smokes the cigarette and extracts the nicotine onto a piece of paper.
We did this for my sister and found that the lights have just as much nicotine even though they advertise lower amounts. It went over well, it's educational, and it's different.

Do a quick project on nitrogen narcosis also know as the bends. This is an ailment that divers suffer from exposure to prolonged preassure at depth. It is a very painful and deadly situation. Use a bottle of soda as an example of gasses coming out of solution due to a release of preasure. Also look up bernoulies law (not sure on the spelling)

When I was younger, I did a science fair project using Cabbage.
Mine was something to do with sticking some cabbage down in colored water & watching the water go through the veins of the cabbage to explain how the cabbage takes in water.
However, i don't know where that project is online, so I types in Cabbage to try to find it, and I found this. It sounds kinda neat.
