Hey there!! It is easy to use an American Express Gift Cheque!! You can use it anywhere just about, mostly at stores!
I used to work for a department store and I have came across plenty of them! Of course, they would look like a check, but in the American Express way. Whatever demonination the check is in, you can buy for stuff up to that amount. I'm pretty sure whatever amount that you go over, you pay that difference out of your own pocket.
Now with the procedures: There should be a line at the top, if I am correct. That is where you write the name of the place you paying the merchandise at (like you would a check). Underneath, I think that you have to write the date, or your name. And the end of that check, you HAVE to sign your name in the cashier's prescence. And a word of advice: NEVER, EVER, EVER go ahead and sign your name as soon as you receive the check. In case it is stolen, anyone can use it as being their own!! So, only sign it when you are actually paying for the merchandise!!
Now when the cashier is processing it, they would have to raise the Gift Cheque to the light, just to see if it is legitimate. They would have to look to the left and see a higerglobe of a dove in the corner (that what American Express do to ensure merchants that that particular check is authentic and legitimate). If satisified, they would complete the transcation, if you come under that amount on the check, you probably gets some change back. If you go over, you pay the difference as I said again!!
Again, remember the advice that I have given to you, and you will do fine!!
Let me know if this works okay for you!!

They're a lot like traveller's checks. When cashing a Gift Cheque, the recipient should countersign the Cheque in the lower left corner with a cashier watching and fill out the pay to the order of line. When the recipient first receives the Gift Cheques, the recipient should immediately sign the Gift Cheques in the upper left corner.
They're good at most stores, restaurants, hotels, etc.

It is a lot like traveler's cheques. If you are depositing it, all you need is to deposit it to your regular bank, they'll just ask you to sign the front-top infront of them, then the font-bottom of it (it doesn't need to be signed infront of the teller). If you want to use it as cash, you have to cash the cheque, which you can do that at your regular bank. They will ask for ID if necessary, it depends on your bank.
If you want to use it to pay at a store, you can write the store name under the payable to area, which is usually in the middle of the cheque. But make sure the store allows checks.
Hope that helps!
